CARIBBEAN PORK
(Serves 4-6)

A great dish that you can just throw in the crock pot and the meal will be ready when your family is, after those fall football and soccer games. 

2 pounds pork roast or tenderloin cut into 1” pieces
2 cups chopped red bell pepper
6 green onions, cut into 1” pieces
2 tablespoons Hoisin sauce
1 tablespoon soy sauce
1 tablespoon lime juice
2 tablespoons creamy peanut butter
1 teaspoon ground cumin
½ teaspoon crushed red pepper
Salt and pepper to taste

  1. Brown the meat in a skillet over medium heat.
  2. When done, transfer the meat to the crock pot; add peppers and onions and stir well.
  3. Mix the rest of the ingredients in a bowl and pour over pork mixture, stir well.
  4. Cover and cook for 4-6 hours on low, depending on the size of your pot.  Serve over rice.
