CRANBERRY RELISH WITH TANGERINE AND MINT -- (Serves 10-12)
This fresh, uncooked relish is also excellent with ham, pork, and game.
3 cups (12 ozs.) fresh or frozen cranberries
2 unpeeled tangerines
1/2 cup packed fresh mint sprigs
1 cup plus 2 tablespoons sugar
2 tablespoons fresh lemon juice
Wash and pick over the cranberries. Cut the tangerines into eights and remove
all the seeds. Place all of the ingredients in a blender or food processor and
grind into a fine puree. Pour into a medium bowl. Cover and chill. Let sit at
room temperature for 1 hour before serving.
