ORIENTAL CHICKEN -- (Serves 6)

This is a wonderfully quick, but quite tasty recipe that I recently found.  The hoisin sauce captures a more authentic Chinese flavor and can be found in your regular supermarket in the Asian section.  It also works well with brown rice for the more health conscious. 

4-6 skinless, boneless chicken breasts
1 red bell pepper, cut into strips
1 green pepper, cut into strips
1 cup chopped onion
5 cloves garlic, minced
(1) 8 oz. can sliced water chestnuts, drained
4-1/2 oz. can of whole mushrooms
1/2 teaspoon ground ginger
3 tablespoons hoisin sauce
Dash Cayenne pepper

  1. Place peppers, onion, garlic, water chestnuts, mushrooms, and ginger in crock pot; stir to blend.
  2. Place chicken breasts on top of vegetables.
  3. Drizzle hoisin sauce on top of chicken and sprinkle with Cayenne.
  4. Cover and cook on low-heat setting 8 hours or on high for 4 hours.   Serve chicken and sauce over hot rice.
