TUSCAN PASTA -- (Serves 8)
 

An easy pasta meal for the family.  All you need is a nice salad and a loaf of bread and you are all set.  Very tasty.

2 cans (14.5 ounces each) Italian-style stewed tomatoes, undrained
1 pound boneless, skinless chicken breasts cut into 1-inch pieces
1 can (15.5 ounces) red kidney beans, rinsed and drained
1 can (15 ounces) tomato sauce
1 cup water
1 medium green bell pepper, chopped
1 jar/can (4.5 ounces) sliced mushrooms, drained
½ cup chopped onion
½ cup chopped celery
4 cloves minced garlic
1 teaspoon dried Italian seasoning
6 ounces uncooked angel hair pasta broken into halves 

  1. Place all ingredients except pasta in slow cooker. 
  2. Cover and cook on low for 4 hours or until vegetables are done.
  3. Turn on high.  Stir in pasta; cover.  Stir again after 10 minutes.
  4. Cover and cook 45 minutes or until pasta is tender. 
  5. Garnish with basil and bell pepper strips, if desired.
