Cranberry Relish with Tangerine and Mint
Serves 10-12
This fresh, uncooked relish is amazing with turkey, but also excellent with ham and pork. It's my go to cranberry sauce recipe for Thanksgiving. It's fresh, flavorful, and the most requested cranberry sauce at all our Thanksgiving gatherings!
Ingredients:
- 3 cups (12 ounces) fresh or frozen cranberries
- 2 unpeeled tangerines
- 1/2 cup packed fresh mint springs
- 1 cup plus 2 tablespoons sugar
- 2 tablespoons fresh lemon juice.
Directions:
Wash and pick over the cranberries. Cut the tangerines into eighths and remove all the seeds. Place all of the ingredients in a blender or food processor and grind into a fine puree. Pour into a medium bowl, cover, and chill. Let sit at room temperature for 1 hour before serving.
