Honey Glazed Chicken
(Serves 4)

Honey glazed chicken is a quick, easy meal prep for dinner; and everyone just loves it.  Great for when you are looking for a lighter meal.  Can easily be doubled for a larger group.  Served over a bed of rice – perfect!

½ cup honey
4 tablespoons soy sauce
1/4 teaspoon red pepper flakes
3 tablespoons olive oil
Cornstarch
Salt and pepper
¼ teaspoon paprika
¼ teaspoon ground mustard powder
2 skinless, boneless chicken breast halves, cut into bite-sized pieces 
Green onions for garnish if you like

  1. Whisk honey, soy sauce, and red pepper flakes in a bowl; set aside. A little tip:  before you pour your honey into a measuring cup, coat the measuring cup with Pam and your honey will slide right out of the cup lickity split.  And easy clean up too!  
  2. Season chicken pieces with salt and pepper, paprika, and ground mustard powder.
  3. Dredge seasoned chicken pieces in cornstarch. This will help thicken up sauce when it cooks down.
  4. Heat olive oil in a skillet over medium heat; cook and stir chicken in hot oil until lightly browned – about 5 minutes. Removed from pan and set aside.
  5. Pour honey mixture into the skillet, continue to cook and stir at a low heat until the sauce is thickened. This should take about 10 minutes.  Add back chicken to skillet with sauce and cook an additional 5 minutes until chicken is no longer pink.
  6. Serve over rice.
